Winery experiments with aging wine in ocean

CHARLESTON, S.C. (AP) - A California winery is experimenting with aging its wine in the ocean off the South Carolina coast.

Napa Valley-based Mira Winery is sinking four cases of Cabernet Sauvignon in specially designed cages into Charleston Harbor on Wednesday.

The idea is to see what effect the motion, temperature, and light in the ocean have on the aging process after three months. Winemakers have long known wine recovered from sunken ships has a unique taste, and the ocean is thought to have something to do with that.

There have been experiments with ocean aging in Europe but Mira Winery says this is the first off the United States.

The wine is being submerged off Charleston because it's the home town of Mira Winery's president Jim Dyke Jr.
