Southwestern Style Stuffed Bell Peppers
Ingredients:
2 bell peppers
½ pound ground beef-divided between each pepper
1 cup spanish rice-1/2 per pepper
half cup per pepper--shredded cheese
1 small can ro-tel diced tomatoes-divide among peppers
6 stems-fresh cilantro -divided per pepper
1 small jar of salsa (hot or medium)
Directions:
Wash and clean out the bell peppers
Put ground beef in a bowl and add half of ro-tel tomatoes to it and add some fresh cilantro
Add a table spoon of taco seasoning, 2 pinches of white pepper, ¼ teaspoon cayenne pepper, ½ teaspoon of black pepper, ¼ teaspoon beef and chicken bouillon and mix it all up
Then pack it into bell pepper 1/3 to ½ full then fill with the spanish rice (cooked)
Then put in oven 375 to 400 degrees for about an hour
Take out and add a handful of cheese (pack it in) cook for another 30 minutes or until cheese is brown and crunchy
