Crock Pot Porcupine Meatballs
 
1.5 lbs ground beef
1.5 lbs ground pork
(1) 10 oz. can of tomato soup
(1) 15 oz. can of tomato sauce
(2) 14.5 oz. cans of diced tomatoes
1 whole green prepper
1 cup yellow onion (or 1 medium)
1 cup uncooked white rice
2 eggs
2 teasp. of salt
1 teasp. of black pepper
1 teasp. of italian seasoning
1 teasp. of crushed red pepper
 
1. pour tomato soup, sauce, and diced tomatoes into crock pot
2. fine chop onion and green pepper
3. combine all remaining ingredients (incl. onion and pepper) into a medium large bowl
4. mix ingredients until well incorporated
5. form into balls: 1.5 in diameter (or 2 oz. balls)
6. place balls into crock pot
7. with lid on, cook on low overnight (or high for 3-4 hours) until meat temperature reaches 185 degrees
8. serve and enjoy
 
makes about 24 meatballs
