Sweet Potato Casserole
3 Medium Sized Sweet Potatoes
1 cup sugar (I use less to cut down on calories)
2 eggs beaten
1 cup milk
1/2 cup butter or margarine melted
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
1/2 cup chopped pecans (optional)
Peel and cook potatoes
Mash potatoes and add all ingredients but the pecans. Mix with hand mixer until smooth
Put in greased (I use butter) casserole dish. Top with pecans.
Bake in oven 350 degrees 1 hour.
This can be served warm, cool or even cold. I tell people it's Sweet Potato Casserole, but tastes like pumpkin pie.
